Mix the soy sauce, honey, ginger, sesame oil and mirin in a bowl.
Cut the chicken breasts into pieces and marinate them in the sauce and coat with the marinade.
Cook the soba according to the package directions. Drain and rinse.
In a frying pan with peanut oil, sear the chicken pieces on both sides.
In a large frying pan, sauté the vegetables with a little peanut oil over high heat, add the soba and then the chicken and its sauce. Mix well. Serve sprinkled with sesame seeds.
