Somen noodles in broth

Preparation :


Recipe for 4 peoples :

  • 300 g of somen noodles
  • 2 leeks
  • 2 red onions
  • 2 cube of miso
  • soy sauce


  1.  Start by washing the leek and onion, then peel and cut into thin slices.
  2.  Melt the miso stock in 1/2 liter of water and add the leek and onion.
  3.    Boil for 20 min.
  4.   For the somen noodles, cook them in a large amount of boiling salted water for 3 minutes and then drain them.
  5.  Finally, add the noodles to the vegetable-miso broth.
